Ghana : Light Soup

What you need

For a serving of 4-6

  • 4 large tomatoes
  • 2 medium-sited onions
  • 3 cloves of garlic
  • 2 chillies (or more if you wish)
  • 1 root ginger
  • 1 whole soup chicken – chopped into pieces

(alt: any vegetables of your choosing / and other type of meat / fresh or smoked fish)

  • salt and pepper to taste (± 2 teaspoons of chicken stock _ alt: fish / beef / vegetable stock)
  • a small handful of torn basil

PREPARATION

In a large pot, combine all the ingredients with 1,5 litres of water. Boil on high heat for 20 minutes before taking out the tomatoes, onion, garlic, chillies and ginger.

Blend these together and return to pot. Cooking time for chicken may vary according to the quantity.

When the chicken is tender, lower the heat and stir in the basil. Let it simmer for a few more minutes before serving.

“The light soup, you can do it anyhow you like it to prepare it. So it’s so much easier preparing light soup than preparing any other soup.

I really enjoy light soup. I really enjoy light soup because it’s easier to make it or to prepare it. And after, washing it is so much easier also. So, I like it.

When you are using something like meat, you have to put more pepper so that you can get the taste. But for fish, just a small pepper, you’ll be alright. It depends on anybody how you like it; it depends.

Light soup is very delicious. You too, go and prepare it and you’ll see it, and you’ll admire it, and you’ll say “Nkansah, oh yeah, light soup is very good!” It’s so much delicious. So much.”
